Parsley Garlic Scape Pesto

 

1 bunch of Parsley chopped, roughly 1 cup
1 bunch of Basil, chopped, about 1/2 cup
1 bunch of Garlic Scapes, diced, 1/2-1 cup, depending on desired pungency
(If you can’t find scapes, swap green onion and a clove of garlic for similar effect.)
Handful of Toasted Pine Nuts, 1/3 cup
Chunk of Parmesan, 1/3 cup
Olive Oil, 2/3 cup
Lemon Juice, big squeeze, to taste, maybe 2 tablespoons

Add all ingredients, reserving the oil for last, to a food processor and pulse until everything is finely chopped. Once well combined, add oil and continue pulsing until you’ve reach desired consistency.

Can’t really go wrong here, whatever you do is going to taste delicious. Serve anyway you like… Or, top a freshly baked sweet potato with a spoonful or two and dig in!
