Nourishing Apple Snack Cake

 

AN OFFERING IN CELEBRATION OF FALL

This apple cake has become a staple in the fridge around here. When health issues had led us to trying alternative diets, this cake ticked many of the “free and friendly” boxes while being tasty enough to feel like an indulgence.

I like to griddle a piece and top it generously with butter, but it is also delicious right out of the fridge.

Easily adapt this recipe by swapping out the apple for pumpkin or zucchini, vary the spices, add nuts or cheese… go wild!


NOURISHING APPLE CAKE

2 small green apples, pureed or finely chopped
2 eggs
2 c almond flour
1/3 c ghee or oil of choice
1/3 c agave nectar or maple syrup
1 T apple cider vinegar
1/2 T baking soda
1/2 t salt
1 T vanilla extract
1 T cinnamon
1/4 t nutmeg
1 t ginger
1/4 t cardamom

Puree or chop apples until they are like an apple sauce or in tiny pieces. Add eggs, ghee, apple cider vinegar, maple syrup and stir well. Add the rest of the ingredients and mix well. Line a loaf pan or square baking dish with parchment paper and fill with apple cake batter. Top with dried apple, nuts, oats, or anything you fancy. Bake in a 375° oven for an hour / hour and a half or until a skewer comes out clean and the exterior deeply brown and bouncy + firm to the touch.

Allow to cool slightly before sharing generously with friends and family.
